World renowned chef, Yannick Alléno, will be arriving at the Monaco establishment in April 2021, which will be his debut on the Côte d’Azur.

The Monte-Carlo Société des Bains de Mer, which owns the Hôtel Hermitage, is known for its continuous pushing of boundaries, consistently upping their game in every aspect of the hospitality field. This new appointment is certainly keeping in line with that vision.

Alléno’s style of traditional French cuisine with modern twists has brought him international recognition which will fit right in with the unforgettable experience Hôtel Hermitage gives guests of luxury, decadent cuisine and incredible service. Both the chef and the restaurant share three key values: tradition, excellence and modernity.

The Hotel Hermitage will be joining an impressive list on the chef’s CV. Yannick Alléno earned his first Michelin star over 20 years ago, in 1999. His second came three years later in 2002. The following two decades were filled with outstanding success: after taking over Le Meurice, in Paris, in 2003, he earned two Michelin stars the following year and bumped it up to three in 2007. In 2008, his own brand was founded. Perhaps his greatest success came after he took over the Pavillon Ledoyen in the gardens of the Champs-Élysées, where he opened the Alléno Paris restaurant - granted three stars just seven months later. In the years since, his establishments from Courchevel to Seoul have won stars, and last year the Pavillon Ledoyen became the most star-rated establishment in the world. The Hermitage clearly has their eyes set on upping their stars from their current one star.

Chef Alléno said of his new venture: "The Hermitage is everything I love, a historic hotel with a lot of charm, I can't wait to cook there. For me, Monaco is a destination with a real culinary life, a varied and diverse place, it’s a really delightful spot where excellence is the order of the day,".
